About Food Sefety Certification for Black Garlic
The purpose of this system is to promote voluntary hygiene management of black garlic manufacturing facilities, and to
provide safer black garlic and also to provide assurance of quality to consumers. That said, this system is to certifies
black garlic that were produced at facilities accurately following the "Guidelines on Management and Operation Standards
to be Observed by Food-Related Business Operators" (formulated and revised by the Ministry of Health, Labor and Welfare
in October, 2014) as well as strictly following hygienic management standards based on HACCP systemization.
Such facilities shall also properly ensure traceability from purchase of raw ingredients to appropriate display of labels.
